Chunky Hearty Tomato Soup

Grain free chunky soup! Quite low in calories as the only starches it contains are from grains, this is a great way to warm up in the winter on our doorstep. INGREDIENTS 1 onion 4 crushed garlic cloves 2 stalks celery 1/2t chicken style stock (salt reduced) 1 passata bottle worth of homemade chunky tomato sauce 1tsp dried Italian herbs 1 can mixed canned beans 1 carrot 1/2 cup red lentils Quarter of a cabbage 1 Bunch of silverbeet greens or other greens (optional) water as needed pepper to taste METHOD 1- Dice and prepare all your veggies. 2- Put onion in a non-stick pan and cook until starting to caramelise and having a wonderful smell 3- Once onions are browning and sticking add in the celery and garlic and stir continually 4- Once your onions are sticking badly you may add in the desired amount of water along with the stock powder (maybe as little as a cup...just a splash)- i keep my kettle handy and just add a splash as iI need it. 5- You then add in your tomato sauce and season wi...

I have no idea what to call this other than Tomato-Veggie crack! RATATOUILLE - AMAZING IN JAFFLES 1 Onion 250g mushrooms, sliced 1 carrot , chopped 1 zucchini, chopped 1 head broccoli florets and or: 2 cups cabbage, shredded 1/4c soy mince (homemade seasoned TVP) 2 TB nutritional yeast 1 TB sweet baby rays, Smokey hickory BBQ sauce 1/2-1 Jar of pasta sauce, I chose garlic (full jar if you like it soupy) 1/2-1 tin beans 1- Fry the onion till translucent 2- Add in the mushrooms and cook till browned 3- add in the carrot and zucchini, cover, string occasionally 4- at whatever point it starts sticking add in pasta sauce (garlic is better than wine), cabbage, “soy mince”, nutritional yeast and BBQ sauce. Cover and simmer, stirring occasionally. my blender is awful, new one coming soon, it would be much smoother with a better blender! This is healthy, but it is indulgent, at 465 calories you might wanna make this a weekend treat! INGREDIENTS 1/4 large avo 1 banana splash of plant milk 1t vanilla essence 2t cacao 2t cocoa 1t macca 1tb peanut butter (for richness and creaminess) 1t psyllium husk powder (for that "gluggy" snack pack consistency) 3-5 drops of stevia METHOD Add ingredients to blender blend till smooth husk powder takes a while to thicken so chill 10 minutes at least, or over night to eat cold serve + enjoy :)
