Grain free chunky soup!
INGREDIENTS
1 onion
4 crushed garlic cloves
2 stalks celery
1/2t chicken style stock (salt reduced)
1 passata bottle worth of homemade chunky tomato sauce
1tsp dried Italian herbs
1 can mixed canned beans
1 carrot
1/2 cup red lentils
Quarter of a cabbage
1 Bunch of silverbeet greens or other greens (optional)
water as needed
pepper to taste
METHOD
1- Dice and prepare all your veggies.
2- Put onion in a non-stick pan and cook until starting to caramelise and having a wonderful smell
3- Once onions are browning and sticking add in the celery and garlic and stir continually
4- Once your onions are sticking badly you may add in the desired amount of water along with the stock powder (maybe as little as a cup...just a splash)- i keep my kettle handy and just add a splash as iI need it.
5- You then add in your tomato sauce and season with pepper. Bring up to a boil.
6- Add in your dry lentils and cabbage.
7- Cook for 30 minutes. Add in your canned beans and greens. Cook a further 10-15 minutes or until desired tenderness is reached. Serve!
