Loaded Potatoes - WFPB veggie loaded, potatoes and stir fry

For my tiny tummy I only heat up a small potato, if you're hungry go for a medium or large.
This is very tasty and no salt or oil to be seen! The topping alone can be a meal and even used in a sandwich or filling or even blended with hummus, I'm sure, would be tasty!

The Humble Loaded potato!

feeds 4 huge portions
Microwave 4 medium potatoes, for 5 minutes each. (make sure to poke the skin so it doesn't explode) I score down the equator for easy peeling afterward and poke it a few times.
1 zucchini, shredded
250g sliced mushrooms
2 medium carrots, shredded
2 cups of cabbage, shredded
Chives, chopped to garnish
3 TB Nutritional Yeast
2 TB besan/chickpea flour
1 teaspoon heaped crunchy natural peanut butter
2 TB Potato flakes (optional) to help absorb some liquid


1 - To a stoneware pan, add zucchini and mushrooms and put the lid on to boil for about 10 minutes - the water will release itself from the veggies - no need to add water
2 - Add shredded carrot and cabbage and boil/steam another 15 minutes without the lid on
3 - Push veggies aside and add stir in peanut butter, besan, potato flakes and nutritional yeast to "Absorb" the liquid and make an instant sauce- and stir to a paste and cook a further 5 minutes till desired consistency is reached
4 - Peel the potato skins off with your hands under cold water - you may want to use tongs to run under cold water to make it cool enough to handle (be careful, it's hot!) and then smash with a fork on your plate. Put a few scoops of the veggies over the potato and sprinkle on top with chives to serve.
