Tomato Veggie Crack - Vegan Jaffle Filler - Potato Topper - Chilli / Ratatouille like thing?

I have no idea what to call this other than Tomato-Veggie crack!


RATATOUILLE - AMAZING IN JAFFLES
1 Onion
250g mushrooms, sliced
1 carrot, chopped
1 zucchini, chopped
1 head broccoli florets and or:
2 cups cabbage, shredded
1/4c soy mince (homemade seasoned TVP)
2 TB nutritional yeast
1 TB sweet baby rays, Smokey hickory BBQ sauce
1/2-1 Jar of pasta sauce, I chose garlic (full jar if you like it soupy)
1/2-1 tin beans



1- Fry the onion till translucent 
2- Add in the mushrooms and cook till browned
3- add in the carrot and zucchini, cover, string occasionally
4- at whatever point it starts sticking add in pasta sauce (garlic is better than wine), cabbage, “soy mince”, nutritional yeast and BBQ sauce. Cover and simmer, stirring occasionally. Add more liquid if sticking or too dry.

5- Once almost done, or fully done, ad in broccoli and half a tin of beans or more and shut the lid and turn off the heat. I like my broccoli really aldente but up to you how well done you want it! 

This stuff is great to make loaded potato topped with avo. Or in a jaffle/sandwich press. Even on pasta, or rice...a side dish or main! Highly recommend. Addictive.
