Turmeric Rice and Veg


Turmeric is so healthy and here is a SUPER TASTY way to get some into your body! I just love this dish, super tasty! Turmeric with pepper increases absorption by 2000%! And with a little fat from the peanut butter helps too!
Jeff Novick is all about "diluting" starches with lower calorie vegetables. Here the rice is diluted with lentils and other veggies lowering the calorie count per weight!


INGREDIENTS:
1 onion, sliced in half moons
1/2c brown rice
1/2c lentils (I used black Australian lentils)
2 garlic cloves, minced
1 tb tomato paste
1/2t curry
1t turmeric
1/8t pepper
1/2t-1t butter chicken masala mix
1/2t-1t mixed spice 
1TB fenugreek
1 TB crunchy peanut butter
1 celery stalk, small diced
2 carrots, small diced
1 head broccoli - into small florets
1/2c peas

1/2c corn kernels

METHOD
1- Rinse rice and lentils and cook in ample water for 30 minutes. (Boil then simmer 30 minutes)
2- Meanwhile prepare the rest of the veggies.
3- Cook onions. Once onions are translucent add in garlic till fragrant.
4- Then add in the tomato paste and spices and fenugreek until fragrant for a minute or 2. 
5- Add in the peanut butter and add water until a sauce consistency is reached. You may now add in the celery, carrot, and cover and cook for 10 minutes, then add in the broccoli. Cover the pan to steam.
6- Once the broccoli is bright green or cooked to your liking you may add in the peas and corn and stir in and cook for 5 more minutes or until the peas are bright green. Serve.
