Gluten Free Vegan Mi Goreng

Gluten Free Vegan Mi Goreng

Smells amazing, tastes great! Would make again!

i hardly had any of the ingredients, but i made it work with what I had lying around and what veggies i LOVE....and i do not regret. The beans did make it taste weird, i recommend using tofu or mushrooms!

Prep All Ingredients
sauce:
2 roast garlic, smashed to a paste, or sliced
2t soy sauce
1tb teriyaki
1t date syrup
1/2t red thai paste
1/4 water
1/2t chicken stock powder

Bulk
1 small onion - fry till translucent
1 carrot
1/4 cauliflower or so
chunk of cabbage, slivered
some green beans
some frozen spinach
Mung Bean sprouts - if u have
1 can beans ( i recommend tofu or mushrooms instead)
Black rice noodles or any noodles inc zucchini noodles if you swing that way - cooked till just separating
Fried shallots and sesame seeds to garnish

Method:
  1. Boil a pot of water
  2. prep veg and sauce
  3. start boiling noodles till just separating
  4. add in the onion and cook till translucent
  5. add in the carrot and cauliflower - you may need to add a splash of water and cover to help it cook. Cook till almost done to your taste.
  6. Add in the rest of the ingredients (but not the noodles or sauce yet) and stir and cover again till it is steamed and basically ready.
  7. Once it looks cooked add in your sauce and stir, then your noodles and stir (coz gluten free noodles fall apart!!)
  8. Top with fried shallots or sesame seeds if you like!
