"Pecan Danish" meets "Vanilla Slice" - Gluten Free + Vegan


"Pecan Danish" meets "Vanilla Slice"
Vegan - Gluten Free - about a 6.5/10
Pastry- store bought. Rolled it and baked without filling.
*Contains sugar


Filling:
Blend the solid part of a coconut cream can with 1 small block of tofu
Add coconut water as required to have it "catch" in the blades (this takes forever to try to get it to catch). The less liquid teh better esp if ur tofu isn't firm
Add 1 pack cotties vanilla instant pudding
Blend if u can. Or stir/hand whisk.
Then add in vanilla and almond essence and a pinch of coffee to "Hide" the tofu taste. (it smells like raw tofu, it tastes like raw tofu- so use a brand of tofu u don't mind raw- yes it exists i promise, but it isn't coles brand, u have been warned lol.)
Then spoon it onto the "crust"
Add the top on.
Mix coconut butter (just blend coconut shreds till it turns to a paste) with some milk, essence, sugar if you want- i used maple syrup.
Drizzle
Top with pecans, or walnuts if you only had the end of a bag of walnuts- bonus- didn't have to chop them first!
Refrigerating makes it firm or else it slops around, it's kinda tough to slice neatly but it manages alright once chilled.
